A lot of people still question: Why is salt being added to desserts & sweet baked goods? Well, just as salt is essential for cooking, it is essential for baking. If you are looking for a great tasting, sturdy, and a longer lasting pastry, a small pinch of salt is the way to go!

That small amount of salt can make the biggest difference and go a long ways, changing the intensity of flavor from chocolate to chocolate-ier, vanilla to vanilla- ier, or fruity to fruity-ier, etc. Salt doesn't only act with the sweetening agents in a recipe, but it also cuts through the bitterness that may be present and therefore makes the recipe sweeter.

For instance, if you weren't to use salt in baking your goods, a Brioche or Pie will be tough and dense with a hard crust, a puff pastry will taste flat and greasy and the color will not be as enhanced. If you ask any baker, it is almost guaranteed that salt is their number one rule of thumb.

I love the taste of salt, but sometimes I feel like I can make it more exciting, texture and taste wise. Without having to pop out all of your different spices from the cabinet, and add them individually onto your food, why not have 1 blend ready for use, stored close to your food preparation area for easy access?

Something I’ve recently tried is making my own gourmet salt blend using herbs and different spices. As barbeque season is right around the corner, this salt blend would add great flavor to any specialty dishes that are barbequed or grilled.
 
Recipe as follows (create the amount desired), these calculations are based on a 1/2 cup of a salt blend.
 
The basic procedure for making flavored salts is to blend the dry ingredients and salt, preferably in a food processor or grinder (ceramic grinding mechanism recommended). This recipe is based on the amount of salt that would be used in a one week period (due to the natural shelf life for the dried ingredients).

Ingredients:
 
Favorite Gourmet Salt- 1/4 cup
Dried Thyme- 1 Tsp.
Dried Basil or Oregano- 1 Tsp.
Dried Garlic Flakes- 1 Tsp.
Dried Lemon Grated Zest- 1 Tsp.
Freshly Grated Pepper- 1 Tsp.
1 dried Chile de Arbol, (seeds removed)
 
Grind all different components together, store in a tightly sealed Jar/Container.

You can leave out or add any additional favorite herbs or seasonings to your blend that best compliments your dish.
